Well we know what happened in USA, but what happened to the other countries such as Australia (where i live so i'm really intrigued to know.), Canada, India (this might be interesting because of the large population rate.) etc? It couldn't have all been the same situation in countries all over the world because they are all different such as some posing much more of a strategic target to nuke and some less.

Well we know that Europe is far worse off because the Resource wars already screwed everything up even before the bombs hit. (Tenpenny and Moriarty from Fallout 3 actually came from the UK)
Canada most likely ended up just like the US. The city of Toronto (or "Ronto") is mentioned in The Pitt DLC as an important power on the east coast.
Other neutral countries wouldn't have been as affected like the US I reckon, but I've always loved to think that Australia ended up being like Mad Max.

China is probably a mess but the islamitic states could be very advanced or extinct

The resource wars were between Europe and the Middle East right? Apparently they dwindled to a nuclear war as well. Most people would probably have thought Australia ended up like Mad Max.

And once the oil ran out in middle east, I think it's also hinted that the European countries ended up fighting eachother or at least ended up in total anarchy.

Europe, Africa, Oceania and Asia (China not included and Japan as neutral) would have just watched the entire nuclear scenario between China and America.
Still, if there where a nuclear war even in the rest of the world, it would be cool to see northern Italy and northern Europe under nuclear winter caused by the numerous detonations of atomic bombs, a nice concept after all (maybe similar to The Long Dark, but with less vegetation). Russia would just became all like Siberia, if even worse due to nuclear winter.
So far I would prefer to say about strong powers, Western Asia, Oceania and Africa do not seems to be much important (for a reason or another) for a possible war.

Soviet Union, year is 2281. Bears have two heads instead of one, so it's kinda difficult to wrestle them now. Damn beasts became too smart. Almost everyone here has turned into ghouls (because vodka is too radioactive). And every morning is a hangover. So, as you can see, nothing has really changed.

Oooh, this is a topic I like .
We all know Europe, North America, and Asia were in conflict, but as far as South America and Africa are concerned, Africa would've continued with its normal course, in a rather tribal society, and South America, more affected than other because of radioactivity, would've been in a deep chaos for some time, and then came back to normal. Why? Because its highly unlikely the south american countries were armed with atomic bombs, and they wouldn't have been bombed either (careful, i'm thinking the fallout universe is similar to ours as far as south american history is concerned).

I would love see some type of nuclear winter scenario.

For that there's Fallout: New Vegas The Frontier, which takes place in Canada. http://www.falloutthefrontier.com/

China would probably be completely wrecked. I'm curious how bad the UK ended up, given that Tenpenny *chose* to move to the Capital Wasteland from the UK.
Honestly though, I doubt any area is really well off. If there was, one would assume you'd see elements of functioning governments having the occasional scouting party in the US for looting or to make comms with remnants of the US government at some point. It isn't even hinted at in Fallout 1 and 2, let alone the modern games.

The only clean country i can think of is Japan as they banned nuclear weapons so yeah. But that's just a theory as it could have been bombed accidentally or purpose by any other nuclear weapon approved country.

I think that if there are any surviving countries they'd stay away from the bombed ones, sure, ocassionally they'd send scouting parties, but in any case I highly doubt they'd send "help".

Even the regions that didn't get hit by the bombs would be ravaged by the radiation. To put it to scale, it's been almost 30 years since the Chernobyl accident, it's just now becoming relatively habitable but there's no clean water or animals in the area, and that was from one reactor; even if only the US and China were the only ones to launch all of their nukes, 4-5k nukes being fired almost simultaneously would create enough radiation that it could irradiate the entirety of the planet with the wind. The oceans on the coasts of both countries would also be flooded with radiation that would cause the flora and fauna to die or mutate, tides would pull the radiation further into the ocean and the wildlife would eat the irradiated wildlife and the cycle would continue. The water would seep into the grounds of other countries and make the crops grown and animals that eat them dangerous, that would also continue onward through the food chain. So, the air would be not breathable, the water would be not drinkable, the crops would be inedible, and the animals would be inedible; although China and America may have been hit hard by the blasts, the entirety of the planet would feel the repercussions of those nukes, though.
Story-wise, I'm not sure if we know what happened to any country other than China.

Honestly, there isn't a lot of lore that explores this
But you know what would be cool
Comic books!
Fallout comics that take place in the other countries
fallout games should stay in America because of the americana theme.
I'm not saying make a fallout expanded universe. just a series of comics going through the pre war of post war endeavors of a foreign person(s)

Some folks, including J Sawyer (One of the masterminds behind New vegas) has actually always been keen to explore other countries in Fallout. http://fallout.wikia.com/wiki/Fallout:_Resource_Wars http://fallout.wikia.com/wiki/Fallout_Extreme Both of these are/were pretty absurd. Can't really see them happening at all.
