As to the argument about how The Force Awakens doesn't make sense, because Anakin fulfilled the prophecy and brought balance to the Force. Well…...like many prophecies in real life, The prophecy of the chosen one is also vague and could apply to many people, things, and situations.

I mean how more vague could you get?!?
Believing strongly in prophecies in most cases is similar to hypochondria. Most of the ailments are common such as muscle fatigue, scratchiness, coughing, sneezing, and even rashes. You begin to think you have this disease simply because you have these things. You start to connect the dots and...Boom!!! You believe you have it and you self-diagnose yourself. While in reality you have minor and/or unrelated ailments, or in this case PROPHECY FULFILLED!!!
Let's imagine if I say “ This year there will be a book about a young adult who experiences a coming of age storyline.” Nearly every story in existence has this. Is my “prophecy” true, yes, yes it is. Because it can apply to an all manner of things. Just as the prophecy regarding the chosen one can.
In Star Wars, in Legends especially, there are many Jedi who destroy Sith. It also doesn't state whether the Jedi destroys the entirety of a Sith Order, permanently wipes out the ideology, or destroys just one Sith. The prophecy is very open ended and could apply to several things.
As in regards to fans who have been into EU, it has been accepted for years now, that it is clear that this prophecy is not as relevant as Lucas wanted it to be. As many EU stories had a similar outcome, of a Jedi rising, destroying the Sith and “bringing balance to the force”. Fans who have only strictly watched the movies would not know this.
The Force also works very mysteriously and incoherently. Like as shown and stated in Star Wars Rebels, Ezra's Force vision's meanings were to him clear as day. But in reality they didn't play out at all what he expected. The same can be said about the "prophecy of the chosen one". An ancient Jedi master most likely had one of those force visions and created the prophecy. Or maybe it just was some crazy old loon on death sticks, who knows.
Now just like Ezra'a visions, it most likely wasn't at all what the ancient Jedi theorized in the prophecy. But the origins of the prophecy of the chosen one are unknown, it could have taken an entirely new spin, it could've been told mouth to mouth. It is especially even more mysterious and unknown in the new canon as it's mentioned way less.
Balance to the force is also not what most people think. To have balance in the force there must be a mixture of light and dark. As was the purpose of the Je'daii in Legends.
Palpatine brought imbalance as he destroyed the Jedi Order and brought the force almost entirely into the dark. Anakin, by killing him offset that imbalance. Now yes he did bring balance to force, but the prophecy again was very vague and didn't say whether the balance was permanent or temporary.
