If I had the time to watch an entire playthrough of a game, I'd probably just play through the game myself.  

I don't really watch playthroughs of Fallout anymore to be honest, What I really love is watching people play Dark Souls or Bloodborne, particularly PvP. It's always interesting to see how people play and what types of sets and moves people are using. Plus you can learn a thing or two  from watching people play, observe how they move and parry. :p
